Lunches

So I work from home. I am a writer who only travels to the mothership four times per year. I also live in a rather remote area, with only a couple of places to get lunch. We’re on a health kick at our house right now, so I’m making good, healthy lunches. But I’m also busy as all heck always at work, so I often don’t have much time to be healthy. So my new thing is the old trick of making a big pot of something and having it all week.

Today it was simplified dal. I made a big pot of it, and the husband hates lentils, so it’s all mine!

Start with your veggies: onions, garlic, carrots, and potatoes. Cut into small bits. Saute the onions and garlic until soft, then add the carrots and potatoes. Get a bit of color on them, then add chicken stock and lentils.

We had roast chicken last week, so there was lots of fresh stock.

Spice it up – I went with sweet curry, kala jeera, salt, pepper, and chile powder, but you can put in whatever you want. I like hot and sweet, so it worked for me. For my acid, I put in white wine vinegar, but that didn’t give me the punch I wanted, so I also added apple cider vinegar.

I put it on during my mid-morning stretch, and by lunch time it was done.
