I got some fantastic produce at the farmer’s market. And decided to make some salsa.

For this, I have:
- Tomatillos
- Tomatoes
- Peppers
- Onions
- Garlic
- Salt
- Chili powder
- Ground ancho
- Lime
I put the tomatillos, tomatoes, onions, peppers, and garlic into the oven on broil for about ten minutes. Timer for five and eyeball it for the rest.

Put the peppers in a plastic bag to loosen the skins. You can do that for the tomatoes too if they’re recalcitrant.

I took a few of the roasted garlic – no sense in roasting only a few cloves, you can use them in other things.
I put all of this – plus any juice from the roasting pan in the food processor with some spices, salt and lime juice. Blitzed it and then adjusted to taste.
Not real hot, but a nice sour salsa. It’ll be good on pork roast.
