Pickled Radishes

There were some lovely radishes today at the farmer’s market this morning.

So I decided to pickle some of them. I’ve had pickled radishes in various things and liked them, so here we go!

I sliced the radishes up reasonably thin. I used two half-pint jars’ worth along with six cloves of garlic. All while watching my secret boyfriend’s new TV show, Long Way Up. Ewan McGregor and Charley Boorman riding motorcycles from the tip of South America to LA. They’ve already done London to New York (Long Way Round) and London to the southern tip of Africa (Long Way Down). Both fun watches, highly recommend.

I made a 1 to 1 mixture of apple cider vinegar and water. I added some salt and honey. Maybe a tsp of each. Heated to dissolve.

Filled the jars to a half-inch headspace and closed them up. They are living in my fridge.

Thinking about Patagonia now. My friends at Kid.Dog.Travel are traveling the world for a while and rode out the pandemic in Patagonia. Loving their pictures.
