So we got a pressure cooker, not an instant pot, but close. We made dynamite chili verde and rice and beans for dinner.
Cube pork and brown. Roast everything else. Put veggies in food processor, put pork, some chicken stock, and purée in pressure cooker. Cook on high for two hours (more maybe, it want completely tender.
After it is done cooking, put aside and add rice, beans, water or stock, corn, if you want it and some salsa. Set for 26 minutes. Let it lose pressure slowly for best absorption.
Cook up some tortillas and go to town.
This would be good with calabacitas.
